Fall Foods: Apple Inspired

This post comes to courtesy of one of my favorite things (EVER!!), the apple. These American fruit are especially top of mind these days… what with the passing of Steve Jobs (I’m not ashamed to say the news put me in a total funk yesterday and I’m experiencing a bit of a hangover from it today), and for all the happy reasons – like fall, crimson reds, bold flavors, ciders, hard ciders (my fav alcoholic bev), crisp crunching and amazing food stuffs.

I did a little searching on etsy (what’s new?) and put together a quick cache of some lovely apple art. Great for hanging in the kitchen if you like to display seasonal art or food inspired art.


Now, my real gift to you though is my Roasted Pork Tenderloin with Apple Cider Glaze recipe. Now I’ve been making this for years, so my apologize to the originator of this recipe (be it friend, family, or cook book). I’ve long since lost that detail. But what I do have is a delicious entrée that will certainly stay in my cool-weather cooking rotation.

ROASTED PORK TENDERLOIN with APPLE CIDER GLAZE

Ingredients:

2              1lb pork tenderloins, trimmed

6              shallots, quartered

1/2 c        golden raisins

3 tbsp      fresh thyme leaves (5-6 sprigs)

Pinch       ground cloves

3/4 c        apple cider

1/3 c        dry white wine

1/2 tsp     salt

1/2 tsp     ground pepper

1 tbsp      olive oil

1 tbsp      unsalted butter

2              mcintosh apples, peeled & chopped



Directions:

1.     Rinse pork, pat dry, and place in a large zip-top heavy-duty plastic bag or shallow dish

2.     Stir together shallots and next 5 ingredients in a medium bowl. Pour over pork, cover or seal, and chill at least 4 hours, turning occasionally.

3.     Preheat oven to 375*. Remove pork from marinade, reserving marinade. Sprinkle pork evenly with ½ tsp salt and ½ tsp pepper. Cook in hot oil in a large ovenproof skillet over medium heat 2-3 minutes on each side or until browned. Remove pork, and add butter to skillet, stirring until melted. Add apples, and sauté 2 minutes. Stir in reserved marinade. Bring to a boil, and boil 2 minutes, stirring often. Return pork to skillet.

4.     Bake for 20-30 minutes, basting occasionally. Slice pork, and serve immediately with glaze.

Week in Review

As you may or may not know, Kate and I have been hella busy this week starting our new gigs (so crazy it happened to be at the same time!).  While I miss working with her in the office everyday, at least we only live a couple of miles from each other.  
We usually like to do an 'Etsy Faves' post at the end of the week, but I'm gonna go ahead and break it down for you all and give you a lil' somethin' special.


1 - Local Alert - have you checked out Olivia Bloom?  It's headed up by a local gal who sources unique and totally cute kiddie clothing.  And while you are there - check out another local chickie's photos that showcase Olivia Bloom's threads - Randi Honey Morgan from Honey and Child.  Her portfolio is mostly baby headshots, but I thought this was an adorable outtake.



I went to high school with Randi (in Prince William County!) and she married a childhood friend of mine, but I never knew how talented she is until I stumbled across her cutesy-pie headbands in her Etsy store


2 - My friend sent me the latest Bloggess post today and I thought she deserves a big ups.  If you haven't read that shiz, check her out, she talks about pet drool, weirdo convo's with the hubby and all kinds of relevant stuff that us women folk deal with.  And BTW - just the header alone begs a read.


3 - Apparently Kate (RHoPWC) is off the sauce now (coffee, you freaks..).  Give her a big round of applause.  Me on the other hand - not so much.
4 - I MISSED THE EMMY'S.  Oh well, all I needed to see what the glitz, so the photos kinda did it for me the next day.  Here's my summary.  Did Katie Holmes just roll out of bed?  Why were the nude sparkly dresses so amazebuckets?  How come Christina Hendricks and Kate Winslet are the only women who ACTUALLY look like real women?  Whoa Julie Bowen - hot!  And Heidi Klum wore a peony from Seal's garden. 

5 - I had to fire my assistant, after only 4 DAYS, for goofing off on the job. (I work from home now)

Favorite Finds: Photography Fashion


While I’m on the path of prattling on about things I like/love/obsess over, I’m just gonna keep going and take you a long with me. This week’s Favorite Find comes to you from my recent search for my very first digital SLR camera. I love photography and while I think I’ve done a pretty good job snapping my amateur pics with a less than brag-worthy Cannon PowerShot, it’s time for an upgrade.

Like any eager shopper, I’ve also been on the hunt to accessorize said camera once I’ve got it in my hot little hands. I found this amazeballs shop, SizzleStrapz, on Etsy and am completely crushing on everything that’s features.

"No Dumping Here"

My fellow 'Real Housewife' just entered the home-stretch on her new kitchen "reno" and with it came a truckload of waste. We have been planning a trip to the Price William Co. landfill, aka "The Dump" since early February, but the 'Snowpocalypse' put a bit of a kink in our plan. We needed to clear out her backyard of the no-good and now rotting cabinets and old rusted out sink, so she could enjoy the new growth starting to pop up all around us, with the onset of spring (knock-on-wood) just around the corner.

We got an early start last Saturday, meeting up at Kate's house around 8am. I say "around" because I can't be held accountable within 15 minutes of a predetermined time on a Saturday! I offered my services and my the use of my Dad's old beat-up Toyota truck to transport the "goods." En route to Kate's house, a whopping 2 miles from my starting point, I had already strained all of my arm muscles from the lack of power-steering in the 'Yota. Poor ole thing - doesn't even have a sub-phylum name, it pre-dates the Tacoma. At any rate, I manhandle the wheel to make the right turn in to her driveway and we load up the bed. We were running at about 85% capacity, but could have fit another cabinet if we had to.

Flying down Rt. 234, it feels as if my paperweight of a truck is doing pretty good, with a full tank of gas and a full bed of junk. Once we get to the dump, we line up to enter the disposal areas (can you believe people are lining up to dump their trash at 8:30am?! I didn't know this was the place to be, but then again, this was my first official trip to the dump as an adult, so I shouldn't be expected to know that domesticated Americans go to the dump on Saturday mornings). Immediately after jamming the parking brake in place, we hop out - camera in hand, to take some candids of ye ole' dump. People must have thought we were out of our gourds... who needs to document the disposal process? We did (and we thought it may make excellent visuals for our latest blog post, too)!!! We emptied the bed of the truck with a bit too much enthusiasm, tossing each piece over the edge of the dock with real gusto and determination. We were determined to feel empowered this day. Last on the list was a pit stop over at the "Too Good To Waste" pile, where the attendant showed us where to drop off Kate's former kitchen sink. All in all - a successful trip to the trash heap.






Moral of this story.....two fun-loving PWC girls for hire! :)
